EmilioLustau ble grunnlagt i 1896 av Don José Ruiz-Berdejo. Det var en moderat start: Don José, dyrket druer på gården Nuestra Señora de la Esperanza som lå i utkanten av Jerez de la Frontera. Her lagret han vinene sine og solgte videre til de store bodegaene for eksport. Han var en lagereier, såkalt almacenista. I 1940 flyttet sønnen Don Emilio Lustau Ortega
